It’s time for garlic smashed potatoes. It’s time to say goodbye to 2020. Take the lows of the last year, season them well and smash them like a baby potato before you burn out their bad juju. The result will be delicious.
Potatoes are the chicken of the vegetable world. You can dress them up. You can dress them down. You can sprinkle them with herbs. You can make them whatever you want them to be. You can also keep it simple, which is what I did with these garlic smashed potatoes.
This recipe is really simple. Potatoes, fresh herbs, garlic and salt. That’s all you need to make one of my favorite sides. They go well with steak, grilled chicken, blackened fish and lots of other things.
From start to finish, this recipe only takes 40 minutes. That’s just the right amount of time to drink a glass of wine, listen to a few good tunes and say goodbye to 2020. I’m sure you could do a lot of other fun things in 40 minutes. I’ll leave that to your imagination.
First, you’ll want to spread your potatoes out on a baking sheet. Make sure you heat the oven to 415 degrees. Take your olive oil and toss it all around. Make sure you get some on the potatoes. If it gets in your hair, brush it in. If your bald, just rub it in.
Take you favorite herbs like rosemary and oregano. Dice them up like pro chef. Sprinkle them across the width of the potatoes. Take your best salt. Sprinkle it like dreams of 2021 on the papas. Place the whole thing in the oven and let you dreams come true. Bake them for 20 minutes. When you remove them from the oven, give them a medium smash. Not too hard. Not to soft. Put them back in and bake for 20 minutes more. Open the oven door and watch your dreams come true.
The easiest way to season these is to sprinkle salt and dry herb mix on these. I like to make my life hard. I removed herbs from my garden with a pair of tweezers and then sprinkled them over the potatoes. Do as you wish.

2 lbs. baby potatoes
4 Tbsp. olive oil
1 tsp. minced garlic
1 tsp. sea salt
2 Tbsp. fresh chopped rosemary
2 Tbsp. fresh chopped oregano
- Drizzle 2 Tbsp. olive oil and 1/2 teaspoon sea salt on potatoes on a baking sheet. Heat oven to 415 and bake for 20 minutes.
- Remove potatoes from oven. Smash gently with a fork. Mix together remaining oil, garlic, sea salt and herbs in a small bowl. Drizzle over potatoes. Bake potatoes for 20 minutes and serve.
